New Year, New You — right? Well, that’s one of my New Year’s Resolutions. Eat healthier and lose weight! So, today I thought I would share one of my all-time favorite (and super healthy dishes) with all of you. I found this Spinach Lasagna Rolls recipe back in 2011 over on Ginas Skinny Recipes. I’ve been hooked ever since and made a few very simple changes. I {love} how it makes perfectly portioned lasagna rolls. For me, the best part is that each piece/serving is only 6 points on Weight Watchers. Oh yeah, baby! I’ve joined Weight Watchers again to get back on track, so this dish is back in the rotation {smile}. Better yet, it doesn’t necessarily taste healthy either. Sometimes it feels good to eat something that feels like a splurge, but it isn’t. Ya know? Anywho, the hubs loves it too.
I’ve realized that I tend to use a lot of tomatoes in my cooking.. maybe because I like a lot of Italian style foods {giggle}. Whether it be crushed, diced, pureed or a sauce, I {love} using tomatoes. I recently discovered the Classico canned tomatoes at my local Walmart, so that is the secret ingredient for this tasty and healthy dish. {Shhhh, it’s a secret!} It’s 100% all natural, packed fresh and contains no preservatives. That, my friends, is fabulous! So, are you ready to make some tasty Spinach Lasagna Rolls? Let’s do it!

Ingredients
10-12 lasagna noodles
9-10 oz. frozen chopped spinach, thawed and drained
15 oz. fat free ricotta cheese
1/2 cup grated Parmesan cheese
1 egg
salt and pepper to taste
32 oz. Classico tomato sauce
3 oz. part skim mozzarella cheese, shredded
Instructions
- Preheat oven to 350 degrees.
- Cook lasagna noodles according to package directions.
- In a medium bowl, combine spinach, ricotta, Parmesan, egg, salt and pepper.
- Spread about 1 cup of tomato sauce on the bottom of a 9x12 baking dish.
- Place a piece of wax paper on the counter and lay out cooked lasagna noodles. Make sure noodles are dry. Take approximately 1/3 cup of ricotta mixture and spread evenly over noodle.
- Roll carefully and place seam down into the baking dish. Repeat with remaining noodles
- Ladle sauce over the noodles in the baking dish and top each one with approximately 1 tbsp mozzarella cheese.
- Put foil over baking dish and bake for 40 minutes or until cheese melts. Make approximately 10-12 rolls.


These are healthy and delicious. Pair it with a salad and dinner roll to complete the masterpiece!
